A heavy rocks glass on a dark bar top filled with milky white cloudy cubes from an ice machine, a few white flakes floating in the water around them, and behind it slightly out of focus a stainless undercounter ice machine with its bin door open showing clumped cloudy ice.

Cloudy, Soft or Wet Ice From an Ice Machine

Ice machine cloudy ice looks milky white instead of glass-clear, with white flakes floating in a drink, soft cubes that crush in the scoop, or wet ice that clumps into a block in the bin.

What it
usually means.

A cube machine makes clear ice because running water over a cold plate lets air and minerals stay in the water that has not frozen, which is flushed away at the end of each cycle. When that process is disturbed, the minerals and air end up in the ice. Hard water and a skipped or wrong filter are the most common reasons: the dissolved minerals freeze in as white streaks and later flake off as scale. A purge that is set too short keeps mineral-heavy water in the sump, and scale on the plate and in the tube makes the flow uneven. Soft or wet ice is a different complaint. A cube machine's ice is solid and dry; a nugget machine's ice is softer by design and a little damp. Cubes that turn soft and stick together usually mean the bin is too warm, the bin door is left open during service, the machine sits in a hot room, or the ice is being harvested before it is fully frozen. A drain that holds meltwater in the bin makes every layer wet from below.

Answer these first

01

Is the whole cube milky, or only the center, and are there white flakes in drinks?

02

Is it a cube machine or a nugget machine, which makes softer ice by design?

03

Do the cubes clump into a solid block in the bin overnight?

04

Is the water in the area hard, and when were the filter and the descale last done?

05

Is the bin door left open during service, and is the bin drain clear?

Check these
before you book.

Ice machine cloudy ice: 5 checks, and none of them costs anything.

01

Keep the bin door closed between scoops for a day and see whether the clumping eases.

02

Look at the bottom of the bin for standing water after a harvest.

03

Check the filter cartridge date and whether it is the type the maker recommends for hard water.

Also worth checking

  • If the descale is overdue, run the maker's cleaning cycle with the approved product, following the manual exactly.
  • Note whether the machine makes cubes or nuggets and photograph the data plate for the visit.

How soon does it need a visit?

Cloudy or soft ice is safe but looks poor in a glass and melts fast. Book at a normal pace; if the ice also tastes off or the bin smells, go to those pages first.

The causes,

6 things cloudy, soft or wet ice from an ice machine turns out to be, from nugget or cubelet ice, soft by design to a bin drain holding meltwater.

The cost guide
  1. 01 no repair

Nugget or cubelet ice, soft by design

Nugget machines compress flakes into soft pellets that are meant to be chewable and slightly wet. They are not cube machines and should not be judged like one.

  2. 02 no repair

A bin door left open or a bin in a hot room

Warm air melts the top layer, which then refreezes into a clump. Closing the door between scoops and keeping the room cooler helps at once.

  3. 03 lowest

Hard water and a skipped or wrong filter

Minerals freeze into the ice as a white haze. A filter matched to the local water, changed on schedule, clears most of it.

  4. 04 low

Scale on the plate or in the tube

Scale breaks up the smooth sheet of water, so air is trapped in the cubes. A descale and sanitize with the maker's cleaner fixes the flow.

  5. 05 low to moderate

A purge setting too short or a sump that does not flush

Many boards let the purge be set for local water. A short purge, or a drain valve that does not open, keeps mineral water in the sump cycle after cycle.

  6. 06 low to moderate

    A bin drain holding meltwater

When the bin drain is slow, ice sits in its own meltwater and turns soft and wet from below. The drain and its trap are cleared.

Questions about
cloudy, soft or wet ice from an ice machine.

Why is the ice from our machine suddenly cloudy?
A filter at the end of its life, scale building on the plate, or a change in the local water are the usual reasons. A descale and a new filter often clear it.
What are the white flakes floating in drinks?
Scale, the same minerals that cloud the ice, flaking off the plate or the tube. It is a sign the machine needs a descale and the filter checked.
Is soft, wet ice normal for a nugget ice machine?
Yes. Nugget ice is compressed flakes and stays softer and damper than cubes. Cubes that turn soft, though, point at a warm bin or a slow drain.
Can an ice machine make perfectly clear ice with hard water?
It gets close with the right filter, a purge set for the water and a regular descale. Very hard water may also need treatment on the line.
