Hoshizaki ice machines,
specifically.

Hoshizaki America sells KM crescent cubers as modular heads and self-contained units with built-in bins, flakers and cubelet nugget machines, and DCM ice and water dispensers. Its machines report problems as counted beeps from the control board, so the first thing we ask on a Hoshizaki call is how many beeps repeat.

The Hoshizaki lineup

What is particular
to Hoshizaki.

We service KM crescent cuber heads (KM-350 to KM-1601 and stackable KMS), self-contained KM-81 to KM-301 units with built-in bins, F-series flakers and cubelet machines, and DCM cubelet ice and water dispensers. Hoshizaki's model suffixes show air, water or remote condensers.

Beeps, not a display

KM cubers and DCM dispensers count their alarms in beeps: one, two, three and so on, repeated every few seconds. The same count means different things on a cuber and on a dispenser, so we confirm the model first.

Crescent ice on a stainless plate

KM machines make crescent-shaped cubes on a stainless steel evaporator, and a float switch in the tank decides when a freeze is done. Hoshizaki says any commercial ice machine cleaner can be used, with no nickel-safe type needed.

Reset lives on the board

The ALARM RESET button for the lockouts sits on the control board inside the cabinet, near live terminals. Resetting is therefore part of a visit, together with finding why the lockout happened.

Hot water can sneak in

Hoshizaki warns that hot water migrating from a defective mixing valve elsewhere in the building can trip its high-temperature safety, often at night. We check the inlet water temperature before replacing parts.

Parts

Control boards changed generations, and each generation has its own factory dip switch settings, so the board part number and model are read before anything is ordered. Hoshizaki manuals are organized by model, so the model and serial number on the label come first.

Repair or replace

Float switches, thermistors, valves and boards are routine repairs on a Hoshizaki. A cuber with a sound compressor is usually worth repairing; a DCM dispenser with a worn gear motor and auger on a hard-water site is where comparing repair with a new unit makes sense.

Questions about
Hoshizaki ice machines.

My Hoshizaki beeps once every three seconds. What does that mean?
On a KM cuber it is the high-temperature safety: the evaporator reached 127 °F during harvest and the board locked the machine out. Hoshizaki points to a stuck hot gas valve, hot incoming water or a shorted thermistor.
How often should a Hoshizaki ice machine be cleaned?
Hoshizaki recommends cleaning and sanitizing at least once a year, and more often where water is hard or dirty.
Do I need a nickel-safe cleaner for my Hoshizaki?
No. Hoshizaki's evaporators are stainless steel, and the company says any commercial ice machine cleaner can be used.
Where is the reset button on a Hoshizaki?
The ALARM RESET button is on the control board inside the cabinet, near live terminals. Book a visit rather than opening the panel.
